Ingredients

  • 1 beef stock cube
  • 1 cup boiling water
  • 1/4 cup honey
  • 2 tablespoons wholegrain mustard
  • 2 tablespoons oil
  • 2 onions (cut into wedges)
  • 1 pound pork ribs (cut into 4)
  • 2 apples (cored, cut into wedges)
  • 1 tablespoon white wine vinegar
  • 1/2 iceberg lettuce (cut into wedges)

Directions

  1. Preheat the oven to 350°F. In a large bowl, dissolve the stock cube in boiling water. Whisk in the honey and mustard.
  2. Heat half the oil in a large frying pan on medium. Saute onion for 2-3 mins, until golden. Transfer to a baking dish.
  3. Sear ribs in the same frying pan on high for 2-3 mins on each side. Transfer to the baking dish with the onion. Scatter apple around the pork. Pour over stock mixture and turn to coat. Bake for 40-45 mins, basting occasionally, until the pork is cooked through and the apple is tender.
  4. In a bowl, whisk together the remaining oil and vinegar. Season to taste. Drizzle over the lettuce wedges. Serve ribs with the wedge salad.
