Description

Vegetable broth is a great thing to have on hand when you want to make a big pot of soup. Making your own broth is super simple, all you need is water, some vegetables, and time. All you have to do is add the veggies to a large pot, cover with water, and simmer for a few hours. This is a basic recipe, but you can easily switch up the vegetables to better accent the type of soup you wish to make.

Ingredients

5 liters water
3 leeks
2 tomatoes
2 potatoes
2 turnips
1 stalk celery
1 red bell pepper
1 onions
1/2 cabbage
4 carrots
2 bay leaves
fresh parsley
salt
ground black pepper

Directions

1Add the water to a large pot. Add the leeks, tomatoes, potatoes, turnips, celery, bell pepper, onion, cabbage, carrots, bay leaves, parsley, and a pinch of salt and black pepper. Bring to a boil and lower the heat to medium low.
2Simmer for 1 1/2 hours.
3Strain the broth and set aside.
