Vegetable broth is a great thing to have on hand when you want to make a big pot of soup. Making your own broth is super simple, all you need is water, some vegetables, and time. All you have to do is add the veggies to a large pot, cover with water, and simmer for a few hours. This is a basic recipe, but you can easily switch up the vegetables to better accent the type of soup you wish to make.

Ingredients

  • 5 liters water
  • 3 leeks
  • 2 tomatoes
  • 2 potatoes
  • 2 turnips
  • 1 stalk celery
  • 1 red bell pepper
  • 1 onion
  • 1/2 cabbage
  • 4 carrots
  • 2 bay leaves
  • fresh parsley
  • salt
  • ground black pepper

Directions

  1. Add the water to a large pot. Add the leeks, tomatoes, potatoes, turnips, celery, bell pepper, onion, cabbage, carrots, bay leaves, parsley, and a pinch of salt and black pepper. Bring to a boil and lower the heat to medium low.
  2. Simmer for 1 1/2 hours.
  3. Strain the broth and set aside.

This recipe makes an excellent vegetable broth. I made a bunch and froze it, perfect for pulling out as I need it for various soups and other dishes. I love recipes that are make ahead which makes future dinner prep easier. Thank you for sharing.
