Description

It is possible to make your own herb flavored butter. And in this homemade rosemary butter recipe you do not have to spend an incessant amount of time shaking a jar like you might have done in elementary school. Chopped rosemary is added to fresh cream and a little salt and whisked until a ball starts to form. It is then pressed into a dish or butter mold and cooled until ready to be served. Top with rosemary flowers for an elegant finish.

Ingredients

  • cream (1/2 lt. cold)
  • 1 teaspoon salt
  • 1 teaspoon rosemary (fresh, tender, leaves, chopped)
  • 1 teaspoon rosemary (flowers)

Directions

  1. 1Place all the ingredients in a bowl, except the rosemary flowers.
  2. 2Whisk together until the cream separates, and the butter forms a ball and sticks to the whisks, leaving the liquid in the bowl.
  3. 3Leave to drain over a colander and bowl.
  4. 4Line a rectangular dish with parchment paper. (Or any other shaped dish—the butter will take the same shape as the dish.)
  5. 5Place the butter into the dish and press down into the sides to completely fill the dish.
  6. 6Just before serving, add the rosemary flowers on the top.
  7. 7Serve with fresh bread.
  8. 8Store in the refrigerator and use up quickly.
