  • 2 red beets (medium, greens trimmed)
  • olive oil
  • 3 1/2 cups flour (all-purpose)
  • 3 large eggs
  • 1/2 cup unsalted butter
  • 2 garlic cloves (minced)
  • 1/4 teaspoon black pepper
  • Parmesan cheese (for garnish, optional)
  • chopped fresh chives (for garnish, optional)
  • Himalayan pink salt (for garnish, optional)

    Directions

    1. Preheat the oven to 375°F.
    2. Prick the beets all over with a fork then rub them lightly with olive oil. Sprinkle the beets with salt and pepper then wrap them securely in foil and roast until fork tender, about 45 minutes. (Note: Depending on the size of your beets, it may take up to 1 hour until they are fork tender.)
    3. Once the beets are cool enough to handle, peel and then roughly chop them. Place the chopped beets in the small work bowl of the KitchenAid® Pro Line® Series 16-Cup Food Processor. Blend the beets into a smooth purée. Transfer 1/2 cup of the beet purée to a medium bowl then whisk in the eggs and a pinch of salt until combined.
