  • 1 onion (medium, chopped {about 2 cups})
  • 4 garlic cloves (minced)

  • 3 medium carrots (chopped {about 1 1/2 cups})
  • 24 ounces marinara sauce (jar of Classico Riviera)
  • 3 cups vegetable broth
  • 15 ounces diced tomatoes (can of)
  • 2 bay leaves
  • 2 teaspoons basil
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 1/2 teaspoon rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 parmesan (rind {optional})
  • 1 cup frozen green beans
  • 1 zucchini (large, sliced {about 2 cups})
  • 15 ounces red kidney beans (can of, drained and rinsed)

This recipe was hearty & delicious! We ended up skipping the spinach and green beans. Was really good topped with fresh Parmesan cheese!

Awesome!!! Love the herbiness and oomph of the tomato in this soup. I omitted the noodles, as I'm following a low carb high protein diet and added some lean, cooked minced meat. It was superb! Happy warm tummy on a cold rainy day :)

The soup was very flavorful. Only thing I did different was use a different marinara sauce. I made half the amount and its low calorie. It's definitely a great lunch the crackers. I'll be making it again
