Ingredients

500 milliliters whipping cream (not UHT and with at least 36% milkfat)
1 tablespoon lemon juice

Directions

1Heat the cream to 90 Celsius in a double boiler. Add the zest. Continue to stir, keeping at the same temperature, for 10 minutes. It will thicken slightly.
2Line a colander with fine cheesecloth and pour in the cream mixture.
3Once cooled, cover the mixture in plastic wrap and place in the refrigerator overnight.
4Remove the mixture from the cheesecloth and place into a tightly sealed container. Leave refrigerated for 1 day before using.
