While the tomatoes are cooked low and slow, they bring out the color in this dish. The onions and garlic add the much flavor to the dish and accompany the vinegar. For spice add the cayenne pepper with the other ingredients to make a nice paste. After the elements are pureed in a food processor you are ready to serve.

Ingredients

  • 1 tablespoon vegetable oil
  • 1/2 onion
  • 1 garlic clove
  • 1 kilogram tomatoes
  • 50 milliliters vinegar
  • 50 grams honey
  • 1/2 cayenne pepper
  • ground cinnamon
  • sweet paprika
  • 4 cloves
  • 1 teaspoon mustard

Directions

  1. Add the oil to a skillet on medium heat. Add the onion and garlic and saute for 5 minutes.
  2. Add the tomatoes and simmer on low heat 15 minutes.
  3. Add the vinegar, honey, cayenne pepper, cinnamon, paprika, cloves, and mustard. Simmer for 30 to 35 minutes.
  4. Add everything to a food processor and puree until smooth.
  5. Strain the ketchup through a mesh strainer.
  6. Cool at room temperature 1 hour and then refrigerate.

This homemade ketchup recipe is one of the best recipes I have found in years. It tastes just like store bought ketchup if not better and it saves me from having to continually buy new bottles. I also never have to encounter the no ketchup crisis. I will make this 5 star recipe every time we need ketchup.
