Description

While the tomatoes are cooked low and slow, they bring out the color in this dish. The onions and garlic add the much flavor to the dish and accompany the vinegar. For spice add the cayenne pepper with the other ingredients to make a nice paste. After the elements are pureed in a food processor you are ready to serve.

Ingredients

1 tablespoon vegetable oil
1/2 onions
1 garlic cloves
1 kilogram tomatoes
50 milliliters vinegar
50 grams honey
1/2 cayenne pepper
ground cinnamon
sweet paprika
4 clove
1 teaspoon mustard

Directions

1Add the oil to a skillet on medium heat. Add the onion and garlic and saute for 5 minutes.
2Add the tomatoes and simmer on low heat 15 minutes.
3Add the vinegar, honey, cayenne pepper, cinnamon, paprika, cloves, and mustard. Simmer for 30 to 35 minutes.
4Add everything to a food processor and puree until smooth.
5Strain the ketchup through a mesh strainer.
6Cool at room temperature 1 hour and then refrigerate.
