With puff pastry in the freezer, these roll-ups are always an option for a weekend brunch or hors d'oeuvre to enjoy with cocktails. Here, the filling is simply sliced Virginia ham and cheddar cheese, but you could (and should) use whatever meats and cheeses are in your refrigerator. Brushing the pastry with egg yolk promotes browning during baking; grated cheese (cheddar in this recipe but Parmesan would also work) is sprinkled over the top also helps.

Ingredients

  • 1 sheet puff pastry
  • 3 slices virginia ham
  • 3 slices cheddar cheese
  • 1 egg yolk
  • cheddar cheese

Directions

  1. Preheat the oven to 200 degrees Celsius.
  2. Cut the pastry sheet into 14 centimeter by 8 centimeter rectangles.
  3. Place 1/2 slice ham and 1/2 slice of cheese on top of the pastry rectangles. Repeat the process for the sheets.
  4. Fold the pastry in half, leaving 1 centimeter at the bottom. Fold again toward the other side. Place on a parchment paper-lined baking sheet.
  5. Cover the Neapolitans with egg yolk using an egg brush. Sprinkle some grated cheese on top
  6. Bake for 10 minutes on one side. Flip the Neopolitans and bake for another 10 minutes.

I have made many neapolitan recipes in my lifetime; however, no of which could amount to this delicious dish. This was an incredibly savory and slightly salty dish that was packed with tasty ham and oozy with cheese. One of the best recipes I have had in a while and I will be making this again and give it 5 stars.
