- 4 cups vegetable oil (for frying)
- 2 1/4 pounds potatoes (peeled and cut into french fries)
- Heat oil to 275°F. Add potatoes, working in batches, and par-cook for 5-6 mins then remove.
- Increase heat to 325°F. Re-fry the potatoes, working in batches, for 4-5 mins until crisp and golden. Sprinkle with salt and serve.
