Description

If you love sun-dried tomatoes, you are going to love this recipe for dried tomatoes. Though they are dried in the oven, not in the sun, these tomatoes are great to have on hand to add to salads, pizzas, and many other dishes. Thyme and rosemary complement the tomatoes perfectly. This recipe definitely takes time to prepare, but you will be happy you did once you see these tasty gems in your pantry.

Ingredients

  • 2 kilograms pear tomatoes
  • sea salt
  • sugar
  • olive oil
  • thyme
  • rosemary

Directions

  1. 1Wash and dry the tomatoes. Cut in half lengthwise.
  2. 2Remove the seeds and place face down to drain on a rack or in a colander for 30 minutes.
  3. 3Preheat oven to 300 degrees Fahrenheit.
  4. 4Spread the tomatoes in a baking pan, avoid overlapping, and sprinkle with a bit of sugar and salt.
  5. 5Bake from 1 to 1 1/2 hours.
  6. 6After that, turn over, and bake again from 1 to 1 1/2 hours.
  7. 7The tomatoes will be dry and creased. If not done, bake anther 30 minutes.
  8. 8Once they're dry, let cool.
  9. 9Place the tomatoes in a clean, dry jar, pressing them in a little bit.
  10. 10Add spices between layers (optional).
  11. 11Once the jar is full, pour in olive oil until tomatoes are submerged.
  12. 12If necessary, the day after, add a bit more: tomatoes must always be in contact with oil for preservation.
