Description

If you love sun-dried tomatoes, you are going to love this recipe for dried tomatoes. Though they are dried in the oven, not in the sun, these tomatoes are great to have on hand to add to salads, pizzas, and many other dishes. Thyme and rosemary complement the tomatoes perfectly. This recipe definitely takes time to prepare, but you will be happy you did once you see these tasty gems in your pantry.

Ingredients

  • 2 kilograms pear tomatoes
  • sea salt
  • sugar
  • olive oil
  • thyme
  • rosemary

Directions

  1. Wash and dry the tomatoes. Cut in half lengthwise.
  2. Remove the seeds and place face down to drain on a rack or in a colander for 30 minutes.
  3. Preheat oven to 300 degrees Fahrenheit.
  4. Spread the tomatoes in a baking pan, avoid overlapping, and sprinkle with a bit of sugar and salt.
  5. Bake from 1 to 1 1/2 hours.
  6. After that, turn over, and bake again from 1 to 1 1/2 hours.
  7. The tomatoes will be dry and creased. If not done, bake anther 30 minutes.
  8. Once they're dry, let cool.
  9. Place the tomatoes in a clean, dry jar, pressing them in a little bit.
  10. Add spices between layers (optional).
  11. Once the jar is full, pour in olive oil until tomatoes are submerged.
  12. If necessary, the day after, add a bit more: tomatoes must always be in contact with oil for preservation.
