Description

Packed with plenty of protein and fiber to start your day off right, these homemade cereal bars are also vegan and gluten free. Packed with nuts, seeds, and dried fruit, these cereal bars are lightly sweetened with maple syrup and bound together with peanut butter.

Ingredients

  • 1 1/2 cups oats
  • 1/2 cup chopped almonds (coarsely)
  • 1/4 cup pistachios (coarsely chopped)
  • 1/8 cup flax seeds
  • 1/8 cup sesame seeds
  • 1/8 cup chia seeds
  • 1/4 cup dried cranberries
  • 1/4 cup maple syrup
  • 1/4 cup peanut butter

Directions

  1. 1Toast oats in oven for about 10 minutes at 350 degrees Fahrenheit.
  2. 2Mix oat, almonds, pistachios, flax seeds, sesame seeds, chia seeds, and dried cranberries in a large bowl.
  3. 3In a small saucepan, mix maple syrup and peanut butter. The mixture should be warm and smooth. Add it to the cereal and nut mixture, mix well.
  4. 4Spread the mixture evenly with a spatula on a baking sheet lined with parchment paper.
  5. 5Refrigerate for at least 1 1/2 to 2 hours, or in the freezer for 30 minutes.
  6. 6Remove from refrigerator and chop into even bars.
  7. 7Store in airtight container for a few days.
