  • 9 apples (honey crisp, granny smith, and fuji varieties)
  • 1 3/4 cups cane sugar (evaporated)
  • 1/4 cup sugar (xylitol, substitute or sugar)
  • 1 stick soy (earth balance, free spread)
  • 1/2 lemon
  • 3 tablespoons lemon juice (about 1 lemon)
  • 2 cinnamon sticks
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons ground cinnamon
