Homemade granola is the best granola and this gluten free vegan granola is no exception. Sweetened with maple syrup and spiced with cinnamon, this granola is packed with nuts, seeds, and dried fruit and pairs perfectly with your favorite nut milk for a nutrition packed breakfast.

Ingredients

  • 2 cups old-fashioned oats
  • cinnamon
  • 1/3 cup maple syrup (or honey)
  • 3 tablespoons canola oil (or sunflower)
  • coconut (shaving)
  • pumpkin seeds
  • sunflower seeds
  • flax seeds
  • almonds
  • pistachios (whole)
  • raisins
  • apricots
  • blueberries

Directions

  1. Preheat oven to 320 degrees Fahrenheit.
  2. Line a baking pan with parchment paper
  3. In a large bowl, mix oats and cinnamon.
  4. Add the maple syrup (or honey) and oil.
  5. Mix well.
  6. Add the coconut shavings, pumpkin seeds, sunflower seeds, flax seeds, almonds, and pistachios.
  7. Mix well.
  8. Spread a thin layer of the mixture on baking pan.
  9. Bake for about 20 minutes until the granola is crisp.
  10. Remove from oven and let cool.
  11. Add the raisins, cranberries and apricots.
  12. Cool completely.
  13. Store in an airtight container, the granola will keep for about a month.

I diced the apricots in this recipe to keep them better integrated with the size of the other ingredients. We use this for cereal or put it in zip-lock bags to carry for a sweet and nutty hand-full whenever needed.
