It durned out great! I loved it so much but I think try boiling the potatoes first so the potatoes are more cooked.

I went shy of the 2 lbs of potatoes, and kept the seasoning the same, this has a nice zing, This is a great cold morning comfort food, I had more than enough for 4 people. I would do this one again.
