  • 2 plum tomatoes (halved)
  • 4 eggs
  • 1/4 cup milk
  • 1 tablespoon fresh chives (chopped)
  • 1 tablespoon fresh parsley (chopped)
  • 1 tablespoon butter
  • 4 whole wheat tortillas (warmed)

Directions

  1. Preheat oven to 350°F. Line a baking tray with parchment paper. Place tomatoes, cut-side up, on prepared tray. Season. Bake for 20 mins.
  2. Whisk together eggs, milk and herbs. Season. Melt butter in a small saucepan over low heat. Add egg mixture and heat gently, stirring, for 3-5 mins, until just set. Distribute between tortillas along with tomatoes. Roll up and serve.
