- 4 lb. pork loin roast (boneless)
- 1 Tbsp. paprika
- 3 Tbsp. fresh parsley (snipped, OR 2 teaspoons, dried)
- 1/2 tsp. fresh oregano (snipped, OR 1/4 teaspoon, dried)
- 1/4 tsp. fresh tarragon (snipped, OR 1/4 teaspoon, dried)
- 1/4 tsp. fresh thyme (snipped, OR a pinch, dried)

Directions
- Mix together all herbs and paprika. Coat roast surface with herb mixture. Roast in a 350 degree F. oven for 40 minutes - 1 1/4 hours (about 20 minutes per pound), or until internal temperature on a thermometer reads 145 degrees F. Remove roast from oven; let rest about 10 minutes slicing to serve.
