Made with fresh mint tea, the spaghetti in this pasta dish has a unique flavor that pairs well with chicken steaks cooked in a garlic lemon sauce. Topped with the crunch of sunflower seeds, this pasta dish is the perfect addition to your meal repertoire. Can be made with gluten free pasta.

Ingredients

  • spaghetti (for 2)
  • salt (to taste)
  • 1 teaspoon tea (spearmint peppermint, from IT by Jugais)
  • 2 garlic cloves
  • 2 steaks (chicken)
  • 2 teaspoons olive oil
  • 1/2 lemon juice
  • 1 tablespoon sunflower seeds

Directions

  1. Start by cooking the pasta in abundant boiling water, seasoned with salt.
  2. Add the spaghetti and the tea. When the spaghetti is cooked, drain, and rinse under cold water.
  3. Meanwhile, heat the the olive oil in a frying pan.
  4. Add crushed garlic cloves and saute.
  5. Add chicken steaks, and cook for 3 to 4 minutes on each side. Season with salt and lemon juice. Add sunflower seeds, and when everything is golden, and the chicken is cooked, remove from heat.
  6. Place spaghetti on individual plates, top with the chicken, and the sunflower mixture.

What a perfect dish! The salmon was moist and the cheese paste creamy and light. The crust was flaky and a beautiful golden color. I was pleased to serve this dish to my extended family and to pass around the recipe after dinner! One caution I would make, is to be sure the salmon is free of bones, although some people are fine to crunch through them, my family is not!
