  • 2 tablespoons olive oil
  • 1 tablespoon all purpose seasoning (McCormick® Perfect Pinch® Salt Free Original)
  • 2 red onions (medium, cut into thin wedges)
  • 2 potatoes (medium, cubed)
  • 1 red bell pepper (large, cut into chunks)
  • 1 yellow squash (medium, cut into chunks)

Directions

  1. Preheat oven to 450°F. Toss vegetables and oil in large bowl. Sprinkle with Seasoning; toss to coat well.
  2. Spread vegetables in single layer on foil-lined 15x10x1-inch baking pan.
  3. Bake 30 minutes or until vegetables are tender, stirring occasionally.
