Excellent! The rub was perfect! Knowing how our oven cooks, I upped the temperature to 360 and it was perfect at 1 hour, 10 minutes

This is the basic way to bake any Cornish hen; the seasoning combination is delicious. The only thing I did additional to this recipe was to raise the oven temperature to 400 degrees during the last 10-15 minutes to get a crispier skin.

I 2 whole Cornish Hens 3 1/4 lbs total, then used 3T canola oil, 2 t garlic powder, 1 t salt, 2 t Penzeys Pasta Sprinkle, 1/2 t coarse black pepper, and basted it once with 3T butter. Baked an hour and a half. Delicious! Thank you! I hadn't made these in years! Hubby liked it a lot!
