Description
Lean ground beef, lots of veggies, and cannellini beans combine to make a satisfying and healthy soup that comes together fast. We added tender Swiss chard at the end for a shot of green, but you could substitute lacinato kale or spinach instead. Serve the soup sprinkled with Parmesan cheese, and offer garlic bread on the side. The recipe is a Yummly original created by Ivy Manning.

- Chop the onion and garlic. Peel and chop the carrots, and chop the celery. Set carrots and celery aside.
- Saute the beef and onion in a Dutch oven over medium-high heat, stirring frequently to break up the meat, until beef is cooked through and onion is translucent, about 6 minutes. Add the tomato paste, garlic, and Italian seasoning and cook, stirring constantly, until fragrant, about 45 seconds.
- Add the beef broth, tomatoes, carrots, and celery to the pot. Rinse and drain the cannellini beans and stir them into pot. Bring soup to a simmer over high heat, cover, reduce heat to low, and simmer until vegetables are tender, about 15 minutes. Meanwhile, prepare the chard.

Delicious! Doubled it all but the beans (because Iforgot to get 2 cans). Our whole family (of 6) liked it. I did add a few cloves of garlic extra and a bit more broth just from other reviewers advice. :) :) Will likely be making this again and glad I have enough to freeze leftovers :) when doubling it fed our family of 6 with PLENTY left!

It's as hearty as advertised. I used about a half pound of sweet Italian sausage instead of the ground beef and would recommend that to anyone wanting that signature Italian flavor. The idea of ground beef in soup didn't sound appetizing by comparison. I also added a half box of cooked pastina and an extra cup of beef stock. I'll definitely make that again.

Haven’t even had it yet and it’s probably just because I’m a novice cook but I ordered two celery stalks like it said and it just far too much celery. Obviously I think they just meant two strips or break offs from the whole stalk but I just used the same wording they had in the recipe and the Walmart app and that’s why I got it this way lol.

Great, I added more beef broth and also used spinach because store didn’t have Swiss chard. Added a zucchini as well.

Turned out good…tasty. I used baby spinach and 3 cans of beef broth. Will make it again!

I cook this every couple of week.
It always turns out great. I usually add some red pepper flakes and a a half cup extra of broth. Otherwise I just follow the recipe. The fam loves it.

Good! I added some extra powders and spices, but overall great and healthy good for bulk cooking.

it was good, nothing spectacular..way too much Italian seasoning! I recommend using 1 TBSP, then taste and add the other tbsp if desired..also I added an extra cup and half of broth

Super good on a fall day! Used ground turkey instead and used spinach as a substitute. Also added zucchini and yellow squash.

Turned out amazing. Served it with cornbread and added some jalapenos while simmering which added a nice layer or flavor.

Not bad but not our favorite either. Leave beef in larger chunks and add more red pepper flakes

this turned out amazing! actually had a lot of flavor. we used spinach instead of chard and added more garlic and meat. absolutely delicious. VERY filling and packed with great flavors! definitely a favorite

I used powdered chicken boullion rather than the beef broth, that with the Italian seasoning made this super flavorful, well-rounded and filling with all the veggies :)

I couldn't find fire roasted tomatoes in a nearby shops but it still good. Awesome taste.
