  • 15 ounces hearts of palm (or half of a 25 oz. jar, drained and cut into slices)
  • 2 avocados (small, diced)
  • 3 tablespoons lime juice (fresh squeezed)
  • lime juice (I use my fresh-frozen, for recipes like this.)
  • 1 cup grape tomatoes (small, cut in half)
  • 1/4 cup green onion (thinly sliced, or more if not using cilantro)
  • 1/2 cup chopped cilantro (optional)
  • sea salt (to taste)

I adapted this recipe since I didn’t have tomatoes or avocados, and added parsley and garlic and avocado oil instead YUM!

Everyone loved this one, even the kids. They said that it tasted almost like a ceviche, minus the fish, of course. We prepared it the next day, and added a little corn. That was even better.

This salad was great, Very light and refreshing. Agree with the review below, would use less lime juice next time. But overall, this is one of my favourite salads.

This Salad was incredible. We plan on having it again tomorrow. Very refreshing. We only made a half size recipe the first time as there is only two of us. The only change we made was to not add as much lime juice to the recipe.
