- 4 pounds sweet potatoes (about 5 medium)
- 2 apples (medium)
- 1/2 cup water
- 1/4 cup honey
- 2 teaspoons cinnamon
- 1/4 teaspoon nutmeg
- 1/2 teaspoon salt
- 2 tablespoons unsalted butter (optional)
- 1/2 cup milk
- 1/2 cup chopped pecans (coarsely, lightly toasted)

I used 6 sweet potatoes, substituted 1 tsp. stevia powder and a few squirts of agave for the honey, added half almond milk and water (1/4 cup each) in the beginning, and didn't add milk at the end (just margarine) and the consistency was just right. Oh my goodness!! so delicious. I could eat this any & every day : ) Thank you, Kristine. Those apples take this dish to a whole different level. Superb !!!
