Ingredients

  • 2 cups mushrooms (8- 9 medium Button Mushrooms)
  • linguine pasta (Wheat)
  • 1 white onion (small)
  • 1 broccoli (Medium, cut into bite-size pieces)
  • 5 asparagus
  • 5 cloves garlic (I love Garlic but you can reduce the quantity if you are)
  • 1 cup corn
  • 1/2 cup parmesan
  • 1/2 juice (Lemon)
  • 1 teaspoon lemon zest
  • basil (to garnish)
  • olive oil
  • salt (to taste)

Directions

  1. Cook the Pasta in water with Olive oil and lots of salt; this way the Pasta is seasoned well.
  2. Cook the Pasta Al Dente as it cooks further in the sauce. Drain the Pasta and keep it aside.
  3. Do not throw away the salty pasta water; that's is the magic ingredient in this dish.
  4. In a pan heat some Olive oil and add Garlic and Onions to it; saute till the Onions turn translucent.
  5. Don't turn the Onions brown. They should be caramelized.
  6. Add all the veggies and toss them.
  7. Squeeze juice of 1/2 Lemon into the the veggies and toss them again.
  8. Add a cup of the remaining pasta water.
  9. Add the pasta and toss the mixture on medium flame.
  10. Cook till the pasta water is incorporated in the pasta and veggies.
