Ingredients

  • 1 cup whole wheat flour (a pinch more depending on the moisture of the mix)
  • 1 1/2 cups old-fashioned rolled oats (quick cooking is ok too- do not use instant)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 teaspoons cinnamon
  • 1/2 teaspoon nutmeg (optional)
  • 1/2 cup honey
  • 1/2 cup oil (corn, grapeseed or olive * you can also use some applesauce to replace some of the oil if you wish*)
  • 1 tablespoon full flavor molasses
  • 1 large egg (beat with 1 tablespoon water)
  • 3 teaspoons vanilla extract
  • 1/2 cup raisins (1 cup for my dad's batch)
  • 1/2 cup walnuts (toasted and chopped, more for my dad's!!)

Wow these were great! I didn't have molasses so I used robust Maple syrup (that's what I had). I did add raisins and they came out delicious. Not too sweet and healthy!!! A winner with my family!
