Great very yummy. Used quinoa- next time will only use 1/2 cup.. used a poblano pepper rather than a green bell and was also good!

I used quinoa instead of brown rice and I didn’t use precise measurements with my spices and added a spritz of lime juice - but this turned out beautifully! I thought I’d eat this with sour cream, but it actually tastes really good without it. Kind of time consuming to prepare if you’re doing it alone, but well worth it :)

Great recipe enjoyed by everyone in my family! I made some modifications - added diced zucchini and instead of kale, I used shredded brussel sprouts and purple cabbage. I also substituted bulger for the quinoa. I will definitely make this again.

Excellent! I used ground turkey instead of chicken. I also used brown rice as opposed to quinoa because I though it was just too much protein and I really didn't want to eliminate the black beans.

The husband loved it and compared it to a burrito without the shell. I personally didn't like it all too much but I am a VERY picky eater but I still think it's decent.

On vacation, I made this dish for my extended family. It was a real hit. Even my little nephews wanted seconds. I had to improvise because I was missing a couple spices. The bottom line is: everyone loved it.

This is delicious! We absolutely loved. It did take just about an hour to make, but it was well worth it. The amount it makes will feed numerous meals. The only thing we changed was we did not have cayenne pepper, so we substituted it for some ancho chili pepper and paprika. We also added fresh cilantro when adding the spinich, it really created a great accent flavor. This dish was extremely flavorful. Best way to describe it would be an enchalada casserole, without tortillas. Great recipe!

Delicious! Added kidney beans instead of the peppers, loved it. May drizzle a little molasses next tine. Will definitely make again.
