- 4 lb. sweet potatoes (I use garnet or ruby)
- 4 Tbsp. butter (ghee or coconut oil)
- 2 Tbsp. maple syrup (real, like THIS - omit for whole30)
- 2 oranges (divided*)
- 1/4 cup fresh orange juice (from about 1 orange)
- 1 tsp. cinnamon powder (Ceylon, a.k.a. "true" cinnamon + extra for sprinkling on top)
- sea salt (to taste, like Celtic or Himalayan)
- 3 pinches cardamom powder (optional - look for it in the bulk spices section if you want to grab a tiny bit)

I like the recipe but I had to add way more spice (Tbl of Penzy’s Pie Spice in addition to Ceylon cinnamon and cardamom. Plus onetablespoon more maple syrup. Love the bright freshness and still wasn’t overly sweet.
