Ingredients

  • 11 cookies
  • 1 pizza crust
  • 2 teaspoons olive oil
  • 1 grilled chicken breasts (diced)
  • 2 cloves garlic (minced)
  • 2 plum tomatoes (or Roma, sliced thin)
  • 1/2 cup olives (kalamata or black, sliced)
  • 2 slices onions
  • 1 ounce pepperoncini (sliced, about 15 pieces)
  • 2 ounces feta cheese (about ¼ cup, crumbled)
  • 1 tablespoon fresh basil (cut chiffonade)

Directions

  1. Preheat oven to 400 degrees
  2. Spray cookie sheet with non-stick and roll out pizza crust. Spread oil evenly over crust and top with garlic, chicken, tomatoes, olives, onions and pepperonchinis. Sprinkle with crumbled feta.
  3. Bake 12-15 minutes, until crust is browned, and top with basil. Serve with Parmesan and a side salad.
