I love easy, tasty meals - this is one of those. It's also quite healthy. The recipe below is for two servings, but it can easily be cut in half or multiplied. Make sure you soak the toothpicks in water beforehand, otherwise they will burn. Goes well over a bed of lightly dressed mixed greens with a little red onion (onion would be a good addition to the stuffing).

  • 12 ounces boneless skinless chicken breasts
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 cup baby spinach
  • 4 leaves fresh basil
  • 2 tablespoons sun dried tomatoes
  • 2 ounces feta (reduced-fat)
  • salt
  • lemon wedge (optional)

    Directions

    1. Preheat oven to 450. Place tinfoil on baking sheet.
    2. Pound out chicken breasts slightly; cut each open to form pocket.
    3. Spray chicken with olive oil spray or nonstick cooking spray. Cover each chicken breast in the paprika, oregano, garlic powder, salt, and pepper - make sure to get both sides.
