A sweet, healthier snack! I didn’t have any Greek yogurt on-hand so I used a mixture of strawberry-rhubarb and blueberry yogurt. I only ended up using 3-4 strawberries to cover the bark which was plenty. I used milk chocolate chips instead of semi-sweet, and 1.5 tablespoons of shredded coconut instead of 1-2 teaspoons. I used a 9-inch cake pan which resulted in fairly thick bark, and took much longer to freeze completely. I would definitely make it thinner next time around.
