Ingredients

  • 2 tablespoons oil
  • 2 chicken breast fillets (each about 5oz, halved lengthways)
  • 3 ounces mayonnaise
  • 4 tablespoons curry powder
  • 4 whole grain rolls (halved)
  • 2 ounces leaves (endive)
  • 1/2 pound light mozzarella cheese (sliced)
  • 2 ounces sun-dried tomatoes in oil (drained and chopped)
  • 1 onion (peeled and cut into rings)

Directions

  1. Heat the oil in a large frying pan and fry the chicken, turning, for 6 minutes. Remove from the pan and season with salt and black pepper.
  2. Mix the mayonnaise and curry powder then spread over the lower half of the rolls. Top with the endive, chicken, mozzarella, tomatoes and onion. Sprinkle with pepper and top with the other half of the roll.
