  • 6 cups old-fashioned oats
  • 1 tablespoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon cloves
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 4 eggs
  • 1/2 cup sugar (liquid, maple syrup, honey, whatever you like, even agave)
  • 2 cups bananas (after mashing, about 4)
  • 1 tablespoon vanilla
  • 2 cups milk
  • 1/2 cup oil (coconut is great, measure AFTER melting, vegetable oil is also fine)

This recipe was FANTASTIC! I wanted something healthy to use some ripe bananas...excellent choice! I used agave for my "liquid sugar". I also used 1-1/2 c. mini chocolate chips...that's NEVER too much chocolate! I mixed the choice chips in with the dry before adding the wet. I added 1/4 c. brown sugar to dry ingredients because I saw it mentioned in one blog this necessary since it has "liquid sugar"? I did not have "milk" so I used half & half. I cooked for 35 min...changing top/bottom shelves & rotating pans front/back halfway through as suggested. One muffin 'disappeared' from cooling rack....hubby ate it and liked it! I used MyFitnessPal to determine nutrition per muffin: 240 cal, 33 carb, 11 fat, 5g protein, 107 sodium, 16 sugar. It did not give me the "fiber", but 1/4 c. oats is 2 g.
