Ingredients

  • non-stick cooking spray
  • 1 egg
  • 1/2 cup miracle whip salad dressing
  • 1 1/3 cups bananas (mashed fully ripe, about 3)
  • 1 1/2 cups flour
  • 1 cup sugar
  • 1/2 cup chopped walnuts
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Directions

  1. Preheat oven to 350º F.
  2. Beat together the egg, salad dressing and bananas in a large bowl with whisk until blended. Mix in remaining ingredients. Add to banana mixture; stir just until moistened.
  3. Pour into a 9x5-inch loaf pan sprayed with cooking spray.
  4. Bake 1 hour or until toothpick inserted in center comes out clean. Cool in pan 10 minutes; remove from pan to wire rack. Cool completely.

Made this for kids and professional chef husband and t was a hit! Glad I made two pans at the same time - will freeze one and have as breakfast this week! Served as a desert tonight with a healthy banana pudding !
