This was a winner winner chicken dinner. I used shredded chicken breast that I had grilled on the George Foreman, and instead of using 1/4 cup Greek yogurt and then a 1/4 cup of mayo I just subbed used 1/2 cup of Greek yogurt instead. Tangy, delicious and creamy would be a super easy meal to whip up using left over chicken as well

My wife and I loved it. Great healthy meal. Like others I omitted the mayo and used 1/2 cup yogurt, and added 2-3 Tbs of cilantro. A slice of tomato is nice for moisture as well. To make things easier i shredded the breast meat of a rotisserie chicken. Great and easy lunch or dinner.

My fiance' and I loved it! The only things I added was some chopped celery for a little crunch and a little bit of a tuna salad seasoning packet that had garlic and onion powder in it. I wasn't sure how the lime would affect the taste of the chicken salad but it was the perfect and final touch. This is an easy and delicious recipe that I plan to make again and again (if The LORD wills that is).

I love this recipe! I've made it without mayo and just double the nonfat yogurt. Sometimes I've added diced red onions to give it some crunch. I just now added lemon instead of lime because that's what I had, and it's still great! You can really play around with it. This has been my go to recipe for using up leftover or cold rotisserie chicken. No need for any bread, it's best just by itself.

Absolutely love this recipe!!! My husband always asks for me to make it. And my kiddos love it as well. No bread needed...spoon and container is all that's needed!
