  • 4 cups homemade chicken stock (canned low-sodium chicken broth would work too)
  • 4 slices fresh ginger root
  • 1 cup sliced mushrooms (any type, but I used mild white mushrooms which seem more soothing for the tummy)
  • 1 cup spinach leaves (sliced into thin ribbons)
  • 1 green onion (very thinly sliced)

I liked it. Doesn’t fill you up like something heavy like stew, but still very good. Would be a great soup when you’re sick. I added bean (Asian) noodles to thicken it up a bit and liked the result.

i didnt follow the directions to a T but i did add some cayenne pepper and a dash of garlic powder. i like it
yummy,but if you are going to store it, wait to put the veggies in until you are ready to eat it. the mushrooms had overpowered the ginger overnight in my fridge

It was good but a bit bland (I understand why) so I did add some salt pepper and cumin. Great for morning sickness preggo chicks and too lol so thank you

Yummy soup! I prefer a spicy broth so I added some crushed red pepper infused sesame oil. Everyone in my family loved it :)

This is a really good comfort food soup. I put a little leftover rice in the bottom of my bowl but it really does not need it. I added 2 cups of spinach ribbons. I would cut them in half next time.

Quick, easy, and delicious. I did add about a cup of diced chicken to make it more filling. I also sautéed the mushrooms in butter, then the green onion for 1 minute longer before adding to soup and some salt. I think next time I will mince the ginger and leave in the soup for more spice.

This was amazing. So easy to make. I added sweet potato noodles and a bit of soy sauce and it was delicious.

This was absolutely delicious! I'm not sick, but made it anyway. I minced the ginger because I LOVE ginger and wanted to leave it in the broth. I also added diced chicken while the broth and ginger were cooking. A little soy sauce and salt at the end and it was perfect.

I followed the instructions (save for adding chicken, bok choy, and using a good quality store-bought broth) and it turned out pretty good. I'd add more ginger next time for a more intense flavor.

so delicious! I added soba noodles and only had ground ginger. Bone broth yummy too!
i used previously frozen ginger and would suggest fresh. i didn`t have green onions so i used a shallot and added chives at the end. i also had fresh dill which added a nice fresh ess. i will do this again

This is a very nice and simple soup. Not a ton of flavor, but I believe the recipe was intended to be somewhat plain. It was a satisfying and relieving dish on a day I wanted warmth and texture.

Good! Light, but filling and flavorful enough. Very easy on the tummy and easy to make. I didn’t have fresh ginger, so I used about 3 Tbs of minced squeezable ginger and it turned out good.
