Hazelnut and Apple Friands

Ingredients

  • 2/3 cup powdered sugar (sifted)
  • 2 cups ground hazelnuts
  • 1/2 cup all-purpose flour (sifted)
  • 13 tablespoons butter (melted)
  • 1 teaspoon vanilla extract
  • 1 green apple (peeled, cored, chopped)
  • 6 large egg whites
  • 1/2 cup roasted hazelnuts (skin removed, chopped)
  • powdered sugar (for dusting)

Directions

  1. Preheat oven to 350°F. Lightly grease a 12-hole friand pan.
  2. In a bowl, combine powdered sugar, ground hazelnuts and flour. Mix in butter and vanilla, stirring gently until just combined. Fold apple into the batter.
  3. In a clean bowl, lightly whisk egg-whites until frothy. Fold in the hazelnut batter.
  4. Divide batter evenly between friand pans. Sprinkle with chopped hazelnuts. Bake 20-25 minutes, or until cooked through when tested with a toothpick.
  5. Cool 5 minutes in pan, then turn onto a wire rack to cool completely. Dust with powdered sugar, to serve.
