Baci di dama — a.k.a. hazelnut "lady's kisses" cookies — consist of two buttery hazelnut cookies sandwiched together a dollop of chocolate or, in this case, chocolate hazelnut cream. Although they're not difficult to make, they're a decadent one-bite sweet with plenty of wow factor. The nut-flour dough ensures they offer the nutty flavor profile you're looking for.

Ingredients

  • 100 grams flour
  • 130 grams sugar
  • 130 grams hazelnuts (coarsely chopped and toasted)
  • 130 grams butter (softened)
  • 1 teaspoon vanilla extract
  • salt
  • cream (Chocolate hazelnut)

Directions

  1. Preheat the oven to 160C.
  2. Place the hazelnuts in a bowl with the sugar, flour, vanilla extract, a pinch of salt, and the butter.
  3. Knead the dough by hand shaping it into a ball.
  4. Refrigerate the dough, covered in plastic wrap, for approximately 30 minutes.
  5. Shape the dough into many cherry-sized balls and place them on a baking sheet lined with wax paper.
  6. Bake the cookies for 20 minutes.
  7. Remove the baking sheet from the oven and cool the cookies on a wire rack.
  8. Spread a small amount of chocolate hazelnut cream on the bottom of one cookie, place the bottom of another cookie on the cream.
  9. Continue pairing all of the remaining cookies and serve.

I created this recipe a total of 4 times; each time they turned out completely superb. These cookies have the optimal amount of sugary goodness to it with just a touch of hazelnut that doesn't overbear you when you eat them. I will be repeatedly making these 4 star cookies every chance that I can.
