Ingredients

  • 75 grams butter (softened)
  • 125 grams sugar
  • 4 eggs (separated)
  • 100 grams hazelnuts (finely chopped)
  • 125 grams bread crumbs
  • 125 milliliters milk
  • 100 grams chocolate
  • 5 milk (generous tbsps.)
  • 25 grams hazelnuts (finely chopped)

Directions

  1. Preheat the oven to 150 Celsius.
  2. Cream the butter and sugar together. Add the egg yolks and continue to mix. Stir in the hazelnuts and breadcrumbs and add the milk, little by little.
  3. Beat the egg whites and fold into the batter.
  4. Pour the batter into a cake pan and bake for 60 minutes.
  5. Remove from oven and allow to cool before removing from pan.
  6. Melt the chocolate with the milk in a double boiler and pour over the cake. Sprinkle with the remaining hazelnuts and serve.

The preparation time on this cake was a little unsettling at first but it was worth the time! I even added to it by toasting all the hazelnuts! The cake was moist and delicious and the toasted hazelnuts gave a warm, rustic feel! I think it would work well with cashew too although that would change the name of the cake!
