Ingredients

  • 1 gram stevia (or 1 tbsp. sugar)
  • 1 tablespoon rice vinegar
  • dried chili flakes
  • cumin
  • 1 cup papaya (diced)
  • 1 mango (medium, diced)
  • 1/4 cup red onion (minced)
  • 1/2 green bell pepper (minced)
  • 2 tablespoons coriander (finely chopped)

Directions

  1. Mix the stevia, vinegar, chili flakes (to taste) and a pinch of cumin.
  2. Add the papaya, mango, onion, bell pepper, and coriander. Mix carefully to avoid crushing the fruit.
  3. Taste and add salt if needed.
  4. Serve as a side dish for chicken or fish.

I absolutely loved this fruit salad. It tasted so sweet and delicious. It is perfect for a summer dessert for taking along to a backyard barbeque. Keep it chilled by filling a big bowl with ice, then setting the Hawaiian fruit salad dish in the bowl. Keep it covered and set both bowls together like that down in a cooler. Try adding in some little marshmallows and coconut flakes to go on top of the desert. It makes it look really pretty for serving.
