  • 2 cups flour
  • 1/4 ounce dried yeast
  • 5 tablespoons olive oil
  • 1/3 pound canned chopped tomatoes (with herbs)
  • 1 pineapple (small, peeled, cored and cut into small chunks)
  • 1/3 pound ham slices (cooked)
  • 1/3 pound mozzarella (sliced)
  • 1/4 pound monterey jack cheese (grated)
  • 2 stalks oregano (finely chopped)

Directions

  1. Sift the flour into a bowl and add the yeast. Add a pinch of salt, then pour in 1/2 cup of lukewarm water and the olive oil. Mix to form a smooth dough, using either the dough hook of a food processor or your hands. Shape the dough into a ball, cover the bowl and leave to rise in a warm place for about 30 mins.
  2. On a floured work surface, roll the dough into a 10 inch circle, then lift onto a greased baking sheet. Season the chopped tomatoes with salt and pepper, then spread over the pizza dough, leaving a border around the edge, then distribute the pineapple, ham and mozzarella on top. Sprinkle with the grated cheese and bake in a preheated oven at 400°F for about 25 mins. Garnish with the oregano and serve immediately.
