This was really good. I made it so my vegetarian granddaughter didn’t have to fix herself something special for dinner. I added chopped red and green bell peppers. I served Spring rolls with it. It was quick and easy and the whole family enjoyed it! I would definitely fix it again.

This has convinced us that we need to keep a can of chickpeas in our pantry! Super easy! We prepared it on a bed of chipotle garlic sweet potato fries and it was INCREDIBLE.
