Baked potatoes never tasted--or looked--so downright delicious: In this classic preparation, whole baked potatoes (cooked until knife-tender) are sliced vertically into rounds, leaving one side intact, and then fanned out--all the better for stuffing with bacon and cheese. You could use most any type of cheese, but gorgonzola imparts big flavor and is a good match for the smoky meat. This would also be good with manchego and serrano ham, or robiola and prosciutto.

Ingredients

  • 2 potatoes
  • vegetable oil
  • salt
  • ground black pepper
  • 2 bacon
  • gorgonzola
  • fresh oregano

Directions

  1. Preheat the oven to 170 degrees Celsius.
  2. Wash the potatoes and pierce them using a fork. Lightly oil the potatoes and wrap in aluminum foil and bake for 1 hour.
  3. Remove the potatoes from the oven and cut into 1/2-centimeter slices, but being careful not to slice all the way through. Season with salt and pepper.
  4. Stuff the potato with bacon and cheese. Place in the oven for 5 minutes until the bacon is cooked and the cheese has melted. Remove from the oven and sprinkle oregano on top.
