    These were delicious! I used black truffle oil, instead of olive oil, and the potatoes came out amazing!

    Delicious and will definitely make these again! I followed the recipe closely with the only 2 exceptions being that I only had red skinned potatoes and fresh Parmesan cheese on hand! Loved the idea of using the skewers to prevent cutting all the way thru the potato! Worked perfectly!
