  • 1/2 cup pine nuts (coarsely chopped, or use almonds or walnuts if pine nuts are not in the budget)
  • 1 onion (medium, chopped fine)
  • 1/2 cup chopped parsley
  • 1 egg
  • salt (1 tsp., I used Vege-sal)
  • 1 teaspoon pepper (or less, I used coarse ground pepper)
  • dried oregano (1 tsp.)
  • vinaigrette dressing (for basting kebabs, for South Beach Diet use dressing with not more than 2-3 grams of sugar per serving; I used Newman's Own Olive Oil and Vinegar Dressing.)
