Ingredients

  • 1 onion (medium, finely chopped)
  • 2 cloves garlic (minced)
  • 3 1/2 ounces arborio rice
  • 1/2 cup chicken stock
  • 2 ounces baby spinach
  • 5 1/4 ounces cherry tomatoes (halved)
  • 3 1/2 ounces ham (thinly sliced)
  • 2 tablespoons butter
  • 1 ounce parmesan cheese (freshly grated)
  • 1/2 cup heavy cream
  • mixed greens (to serve)

Directions

  1. Combine onion, garlic, rice and stock. Cook in a rice cooker or large saucepan for 15-18 mins, or until most liquid has been absorbed and rice is tender.
  2. Add spinach, tomatoes, ham, butter, parmesan and cream and stir to combine. Cover and set aside for 10 mins, or until spinach wilts. Season and serve with mixed greens.
