A simple dough is made using flour, milk, baking soda, and lard to create a flaky a delicate base for this recipe. The dough is lightly fried, this allows the the dough to puff up and creates a pocket that can be filled. In this recipe, the pocket of the bread is filled with ham, gorgonzola, and sauteed mushrooms creating a melty, savory bite. You can serve these as an appetizer or try them for dinner with some sauteed vegetables for a complete and filling dinner.

Ingredients

  • 500 grams flour
  • 6 grams salt
  • 2 grams baking soda
  • 200 milliliters milk (or water)
  • 75 grams pork lard (you can substitute vegetable shortening, room temperature)
  • ham slices
  • gorgonzola cheese
  • mushrooms
  • brie cheese
  • 1 onion (sliced)
  • 1 tomato (large, diced)

Directions

  1. In a bowl, add the flour and make a well in the middle. In the middle, pour the salt, baking soda, milk (or water), and lard. Knead 10 minutes until smooth and firm (no longer sticky). Let rest 30 minutes.
  2. Pinch off sections of the dough, roll them out, and fry them for 1 minute on each side in a nonstick skillet.
  3. Open the breads and fill the inside with ham and gorgonzola or lightly sauteed mushrooms and Brie.
  4. Put the pocket bread back into the skillet and heat through until toasted and the cheese has melted.
  5. Serve with onion and diced tomatoes.
