Ingredients

  • 3 large potatoes (grated)
  • 5 1/4 ounces cooked ham (diced)
  • 1/3 cup parsley (chopped)
  • 1/2 onion (grated)
  • 2 cloves garlic (finely chopped)
  • 1 large egg (lightly beaten)
  • salad leaves (to serve)

Directions

  1. Squeeze out and discard as much water as possible from grated potato. Combine with remaining ingredients and season to taste.
  2. Spray a large non-stick frying pan with oil and heat on medium. Cook large spoonfuls of mixture, in batches, for 4-5 mins each side, until golden and cooked through. Serve with salad.
