Cooking for one can be a challenge. Here's a great way to break out of your rut: Sear some ham or prosciutto strips in a hot skillet until nice and browned, then crack in a couple eggs and cook until the whites are set and the yolks are to your liking (runny or not). Enjoy the dish for breakfast, lunch, or a light supper, right out of the skillet, with crusty bread if desired.

Ingredients

  • 1 tablespoon butter
  • 5 slices ham
  • 2 eggs
  • salt
  • ground black pepper

Directions

  1. Melt the butter in a nonstick or cast-iron frying pan on medium heat. Add 4 slices of ham and cook until brown.
  2. Break the eggs onto the ham slices. Allow the whites to set, but leave the yolk a little soft.
  3. Season with salt and black pepper to taste.
  4. Garnish with strips of ham and serve hot.

I tried this recipe after I found myself with a house to myself and extra hungry. It was a really easy recipe to make and the entire dish filled me up with some still left over. I wanted mine to be extra cheesy so I added lots of cheddar cheese. The ham was nice and juice and the eggs were cooked perfectly. I'll be making this 4 star recipe again shortly.
