Ham and Eggs for One

Description
Cooking for one can be a challenge. Here's a great way to break out of your rut: Sear some ham or prosciutto strips in a hot skillet until nice and browned, then crack in a couple eggs and cook until the whites are set and the yolks are to your liking (runny or not). Enjoy the dish for breakfast, lunch, or a light supper, right out of the skillet, with crusty bread if desired.
Ingredients
- 1 tablespoon butter
- 5 slices ham
- 2 eggs
- salt
- ground black pepper
Directions
- 1Melt the butter in a nonstick or cast-iron frying pan on medium heat. Add 4 slices of ham and cook until brown.
- 2Break the eggs onto the ham slices. Allow the whites to set, but leave the yolk a little soft.
- 3Season with salt and black pepper to taste.
- 4Garnish with strips of ham and serve hot.
