- 2 cups flour
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 1 egg
- 1 cup buttermilk
- 1/4 cup vegetable oil
- 8 oz. ham steak (boneless, diced)
- 1 1/2 cups cheddar cheese (grated)

Directions
- Heat oven to 400 degrees F.
- Lightly grease and flour 12 regular muffin tins. In a large bowl stir together the flour, baking powder and salt; set aside. Whisk together the egg, buttermilk and oil in a small bowl. Stir in the ham and cheese. Using a rubber spatula, stir the egg mixture into the dry ingredients just until combined. Do not overmix.
- Spoon into each of the prepared muffin tins approximately 3/4 full. Bake until golden brown, about 20 minutes. Remove from muffin tin and let cool.

Needs more salt for sure but the recipe has potential. I would add more salt and cheddar cheese. I used a mini muffin pan and did two batches. It was perfect at 10min. also did 13min and that was a little dry. I did half bacon and half ham & added spinach.

Unfortunately converting the recipe to cups and tablespoons, etc. made the muffins not turn out. They still taste ok if they had turned out I’m guessing super yummy!

Easy, delicious, and the perfect warm breakfast on a cold morning. Great side with soups and stews. Update 5/25/23. Used 1 C flour and 1 C cornmeal, 1 small can green chilis, no ham, for a variation. Mini muffins 15 minutes. Yum!

I made these for my husband and kids. The kids were not fans of it, so I think they were ok. I unfortunately won't be making these again.

Really yummy. I added extra ham and cheese. As well as spices and cooked onions and corn. I also made it dairy free by substituting the buttermilk with unsweetened coconut milk and dairy free cheese 👍🏻👍🏻
Might try adding spinach next time to make it more hearty 💜
