  • 9 ounces elbow macaroni
  • 2 tablespoons cornstarch
  • 2 1/2 cups milk
  • 6 ounces ham (off the bone, diced)
  • 2 tablespoons fresh flat leaf parsley (finely chopped)
  • 1 2/3 cups cheddar cheese (grated)

Directions

  1. Preheat the oven to 350°F. Grease six 3/4-cup ramekins and place on a baking pan. Cook macaroni in a large saucepan of boiling water according to package directions. Drain; return to the pan.
  2. Blend cornstarch with a small amount of the milk in a medium saucepan until smooth, then stir in remaining milk. Cook on medium-high heat, stirring constantly until sauce boils and thickens. Add sauce, ham, parsley and 1 cup of the cheese to the drained macaroni; mix well. Divide mixture among prepared ramekins. Sprinkle with remaining cheese.
  3. Bake for 30-35 mins, until tops are golden.
