  • 8 ounces cubed ham
  • 1/4 cup diced celery (finely-)
  • 1 cup water
  • 1 cup low sodium chicken broth
  • 1 can soya bean (Eden black)
  • 1/4 cup carrots (tiny-diced)
  • 2 teaspoons minced onion
  • 1/4 teaspoon minced garlic (optional)
  • 1/8 teaspoon cayenne pepper
  • 1/4 teaspoon cumin
  • 1/4 teaspoon salt

    Directions

    1. In a medium sauce pan, brown the ham. Add 1 cup of water and scrape glaze off bottom of pan. Add low-sodium chicken broth.
    2. Drain the water from the can of beans. Add beans to the sauce pan.
    3. Add all other ingredients. Stir. Bring to a boil; turn down heat and simmer for at least 1 hour to bring out the flavors - the longer, the better (3+ hours being best.)
